Quick Pie Without Phyllo Sheets

7 g dry yeast

150 ml lukewarm milk

180 ml lukewarm water

70 ml oil

4 eggs (room temperature)

200 g cow cheese (crumbled)

a little butter (for greasing)
Preparation:

In a deep bowl, mix the lukewarm milk, lukewarm water, dry yeast, sugar, and salt. Add the oil and gradually incorporate the flour. Mix with a spoon or spatula until everything combines into a soft and sticky dough.

Cover the bowl with a clean cloth or plastic bag and let the dough rise in a warm place for about 30 minutes or until it doubles in volume.

After rising, lightly stir the dough with a spoon, then add the eggs and cheese. Mix well until fully incorporated.

Grease a 25 × 30 cm baking tray and dust it lightly with flour. Spread the dough evenly in the tray, cover, and let it rise for another 20–30 minutes.
