Blueberry Muffin Cookies with Streusel Topping

 Ingredients

For the Cookies

  • 1/2 cup softened  butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg (room temperature)
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup fresh blueberries
  • 1/3 cup blueberry jam

For the Streusel

  • 1/3 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 cup cold butter, cubed
  • 1 tsp cinnamon
  • 1/4 tsp salt

‍ Instructions

1. Make the Streusel

  • Combine the flour, brown sugar, cold butter cubes, cinnamon, and salt.
  • Cut the butter into the dry mixture using a fork or pastry cutter until crumbly with pea-sized pieces.
  • Chill the mixture while you make the cookie dough.

2. Prepare the Cookie Dough

  • Cream together the softened butter, brown sugar, and granulated sugar until the mixture becomes fluffy (about 2–3 minutes).
  • Mix in the egg and vanilla.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually stir the dry ingredients into the butter mixture just until everything is incorporated.

3. Add the Blueberries

  • Carefully fold in the fresh blueberries, trying not to break them.

4. Shape & Swirl

  • Drop scoops of dough onto a baking sheet lined with parchment.
  • Add a small spoonful of blueberry jam to the top of each scoop and gently swirl it with a knife or toothpick.

5. Add the Streusel

  • Generously sprinkle the chilled streusel over each cookie, pressing lightly so it sticks.

6. Bake

  • Bake at 375°F (190°C) for 12–15 minutes, until the tops turn slightly golden but the centers remain soft.

7. Cool & Enjoy

  • Let the cookies cool completely before serving.
  • They’re especially wonderful warm, paired with a cold glass of milk or your favorite hot drink.
