TRADITIONAL RECIPE FROM MY GRANDMOTHER

This recipe, passed down from my grandmother, combines easy preparation with incredible flavor – crispy on the outside, soft and airy on the inside.

Ingredients:
– 400 ml warm water
– 10 g dry yeast
– 1 teaspoon sugar
– 1 tablespoon vinegar
– 2 tablespoons yogurt
– 1 egg
– 1 teaspoon salt
– 550 g flour
– 400 ml vegetable oil (for frying)

Procedure:

In a deep bowl, mix 400 ml warm water, 10 g dry yeast, and 1 teaspoon sugar. Let the mixture rest for 3 minutes to activate the yeast.

Add 1 tablespoon vinegar, 2 tablespoons yogurt, and 1 egg. Mix well until the mixture becomes smooth.

Gradually add the flour (550 g total), mixing with a spoon or by hand. When the dough begins to form, add 1 teaspoon salt.

Knead until you get a soft, slightly sticky dough. Cover the bowl with a clean cloth and let the dough rise for 1 hour in a warm place.

After 1 hour, oil your hands lightly and gently gather the dough. Transfer it onto a greased work surface. Gently roll it out into a thick sheet.

Divide the dough into equal pieces and form small balls. For easier shaping, use a cup greased with oil to cut the dough.

Let the shaped balls rest for 10 minutes covered with a plastic bag. Then flatten each one with your hands and make a small hole in the center with your fingers.

Heat 400 ml vegetable oil in a deep pan at a temperature just below high. Fry the pastries, making sure not to overheat the oil.
When one side becomes golden-brown, flip to the other side. -
Repeat the process for all pastries, frying them evenly.
